We are lucky to be surrounded by more local distilleries than ever before here in Australia. With the climate being so specific to this part of the world, and the hunger and innovation of our producers being at an all-time high we have decided to showcase much of that talent through our carefully curated whisky menu.

ABV: 40%
Aroma: bright red berries coated in buttery vanilla spice
Palate: imagine a smooth, rich caramel dessert balanced by tropical fruit
Finish: delicate and long. A delicious, dry finish from a faded sweetness -
Starward Distillery - Nova Single Malt
ABV: 41%
Aroma: Like we took bright flavours of red berries and orchard fruit and coated them in soft oak spice
Palate: Imagine a rich red berry pudding covered in vanilla, caramel, and spice
Finish: Balanced and long. The sweetness fades and the delicious flavour goes on

Aroma: Buttery dark rye bread with hints of spice
Palate: Sweet all spice cloves, pepper and green apple

ABV: 42.5%
Aroma: Baking spices and rich caramel
Palate: Sweet oak orchard fruits are coupled with dark toffee

Morris Distillery - Single Malt Muscat Barrel
ABV: 46%
Aroma: Rich with dates, figs & sweetness of dark molasses
Palate: Well-balanced and complex. Dried fig, sweet malt, vanilla & spices with a creamy mouthfeel
Finish: Superb oak influence, lovely finish with a satisfying aftertaste that lingers
South Australia

78 Degrees Distillery - Muscat Barrel
ABV: 44%
Aroma: Rich stewed fruit and raisins up front, give way to dark chocolate and apricot. A faint whiff of smoke on the nose, with rich notes of digestive biscuits
Palate: Raisins and stewed prunes on the front palette give way to notes of cocoa pops. Dried apricot comes through late, with a tingling spice of black pepper
Finish: The taste of dark fruit, along with some rich demerara sugar. A lingering note of clove and black pepper, along with a faint smokey note.

78 Degrees Distillery - Australian Native Grain
ABV: 44%
Aroma: Intense cereal characteristics & apricot kernel from the Weeping Grass mingle with caramel, toffee & toasted malt from the traditional grain
Palate: Rich and creamy with beautifully balanced french oak influence. Fresh red berry character. Apricot kernel, stone fruit and spice give way to earthy almost ginger character
Finish: Beautiful long finish, including notes of dried apricots and kitchen spice.

Fleurieu Distillery - Albatross Single Malt
ABV: 46%
Aroma: Lifted malt nose
Palate: a lively palate with hints of allspice and nutmeg integrated with tawny oak character for good weight and length / Finish: lingering barley and raisin sweetness

5Nines Distillery - The Hills Single Malt
ABV: 45%
Aroma: Mellow oak with peach and raisins
Palate: creamy, spice, dried fruit, citrus, vanilla, almonds
Finish: smooth and warm with a long finish and luxurious mouthfeel

23rd Street Distillery - Australian Single Malt
ABV: 46%
Aromas: Toffee, lifted fruit, and delicate vanillin oak trail into an evocative hint of wine cellar
Palate: Full and lightly sweet, with citrus and apricot, bedtime malted milk
Finish: Butterscotch oak and lingering warmth.
Tasmania

Lark Distilling Co. - Classic Cask Single Malt
ABV: 43%
Aroma: Golden syrup and vanilla with hints of oranges and grapefruit. Plum pudding, Christmas cake, cinnamon sticks, nutmeg and a wisp of Tasmanian peat smoke.
Palate: Sweet vanilla transforms into a heady combination of orange peel, butterscotch, cloves, nutmeg and grapefruit.
Finish: Butterscotch and citrus notes with a long, satisfying smoky finish.

ABV: 44%
Aroma: Zesty orange with custard and lemon meringue
Palate: Candied citrus peels, vibrant cola and buttery malt developing towards soft orange custard with a dusting of cinnamon.
Finish: Lemon meringue pie with flashes of zest and spice

ABV: 46%
Aroma: Earthy peat intertwined with a delicate floral character and sea spray.
Palate: Floral peat develops amongst dark chocolate and oyster shell, with hints of coffee and marmalade
Finish: Ginger snap biscuit, sea spray and subtle ash

ABV: 42%
Aroma: Bright and fresh tropical fruits laced with freshly baked cookies and subtle oak
Palate: Viscous and syrupy sultana arrival followed by deep mocha and caramel
Finish: Clean and moreish, with a tropical crescendo and lingering malt

Spring Bay Distillery - Single Malt Bourbon Barrel
ABV: 46%
Aroma: Immediate sweet notes of vanilla and crème brulee with fruity and herbaceous undertones
Palate: From a bright and sweet opening the flavours build across the palate to a rich, clean alcohol-driven crescendo culminating in a big, warm and comforting glow of spicy tannin hints and peach flesh
Finish: Long and warm with the afterglow fading into semi-sweet caramel and lingering stone-fruit tingles

ABV: 42%
Aroma: Rich nutty nose with raisins and melting sugar
Palate: Light sweet almost floral caramel that just glides over the palate.
Finish: Flavours just fly around your mouth and leave a light lingering bright sweetness to finish.
